    OVERVIEW:

     

    The Sous Chef will assist and support the Executive Chef and culinary team and ensure a memorable dining experience, according to LHW and Hotel Granduca standards.

    Responsibilities

    • Comply with standards of service and assist in ensuring the same from the culinary team
    • Assist with recruiting, training and development of team members

    • Schedule team to maximize productivity and minimize labor cost

    • Participate in food preparation, and expedite during peak meal periods if necessary

    • Educate culinary team on cost control and train Culinary, F&B and steward teams on the proper handling of leftover food items

    • Assist the Executive Chef with creating and revising menus and maintain oversight of preparation of new menu items
    • Assist with scheduling, based on events and occupancy
    • Collaborate with F&B teams to ensure food is delivered in a timely manner
    • Monitor inventory and expiration dates of items and assist with ordering and replenishment of supplies and equipment
    • Supervise the culinary team in the absence of the Executive Chef and maintain structure and discipline 
    • Assist with creating a positive enironment with pride and a passion for the job and attention to detail
    • Establish positive relationships with management, F&B and other departments 
    • Promptly acknowledge and address all guest & employee concerns and follow up to timely resolution
    • Maintain a clean, organized and sanitary work area
    • Ensure all kitchen employees consistently adhere to proper uniform, grooming and appearance standards, hotel policies and OSHA/Food Handling regulations
    • Comply with health department and sanitation guidelines

    • Practice and enforce the Daily Core Values and 3 Steps of Service
    • Maintain a positive, cordial and professional demeanor and adhere to the policies of the hotel
    • Maintain effective communication within the culinary team and other departments to ensure smooth operation of department and excellent guest service

    • Conduct regular inspections of the kitchen/dishwashing areas, equipment, tools, supplies, coolers and storage areas to ensure compliance of Health and Sanitation standards are met

    • Attend and participate in all required meetings 
    • Perform other duties as assigned

    Qualifications

     

    • High School Diploma and/or or college credits from accredited Culinary School
    • Minimum 2 years' related experience as a Sous Chef or in a supervisory role,  in a full service or luxury hotel
    • Full knowledge of menu items, ingredients, preparation methods, fine dining presentation
    • Experience in the preparation of pastry and desserts preferred
    • Knowledge of Northern Italian and international cuisine preferred
    • Experience managing schedules, labor costs, and productivity
    • Proficient in all Microsoft programs- Word, Excel, Outlook and Power Point
    • Valid ServSafe or Food Handler's certificate required
    • Excellent time management and organizational skills and ability to multi-task
    • Professional email and telephone etiquette and interpersonal skills
    • Ability to remain calm and demonstrate positive leadership skills at all times
    • Excellent command of English- both verbal and written
    • Bilingual English/Spanish preferred
    • Experience with creating purchase orders and ordering supplies
    • Must be able to work required shifts, including weekends and holidays based on business demands
