    The Executive Chef is responsible for managing the culinary department and overseeing food preparation and presentation according to LHW and Hotel Granduca standards. The Executive Chef will strive to ensure that the culinary team will consistently exceed our guests' expectation through exceptional guest service, preparation and presentation of all food items from Hotel Granduca's kitchen.

    • Collaborate with Ownership to create standard and special recipes and menu items for all Food & Beverage outlets, Banquets 
    • Train and develop the culinary team to perfect the preparation and presentation of daily and new menu items
    • Oversee the daily operations of the kitchen, coordinate food production schedules and ensure highest level of food quality, taste and presentation

    • Provide support and assist in food preparation during peak meal periods as required
    • Establish food control procedures and educate the culinary team on cost control

    • Train culinary, outlets and steward teams on the proper handling of leftover food items
    • Monitor food and labor costs to minimize loss and ensure hotel's financial goals are met
    • Ensure team is trained on ServeSafe, BBP, OSHA and Fire Safety procedures
    • Schedule employees based on hotel occupany and events while monitoring labor costs and staying within department budget
    • Purchase supplies and equipment and ensure adequate inventory of all products
    • Promptly address and resolve guest issues in a timely manner to ensure guest satisfaction 
    • Hire, train and develop the culinary team to exceed the guests' expectations
    • Attend and participate in weekly/monthly managers meetings as required
    • Maintain positive relationships with vendors, and negotiate while maintaining hotel standards
    • Conduct daily pre-shift and monthly department meetings 
    • Communicate and collaborate with the F&B and Sales team to plan and successfully execute special events and functions
    • Address and resolve employee conflict and maintain high morale within the department
    • Create a positive environment and promote teamwork
    • Enforce grooming and appearance standards, hotel policies and compliance to applicable laws and regulations
    • Practice and enforce the Daily Core Values and 3 Steps of Service

    • Conduct regular inspections of the culinary and stewarding department and coolers

    • Collaborate with Restaurant and expeditors to perfect the timing, serving and presentation of menu items

    • Perform other duties as assigned




    • Bachelor's degree or diploma from culinary school required
    • Minimum 4 years' experience as an Executive Chef in a full service or luxury hotel
    • Experience in a fine dining facility required
    • Experience in the preparation of Italian cuisine, pastries and desserts 
    • Experience managing schedules, labor costs, and productivity 
    • Prior experience with Banquet preparation
    • Excellent organizational and time management skills and ability to multi-task
    • Ability to think strategically and improvise to adjust to guest's needs
    • Excellent email and telephone etiquette leadership and interpersonal skills
    • Proficient in all Microsoft programs - Word, Excel, ppt and Outlook
    • Serv Safe or Food Handler's certificate is required, including certification from City of Houston
    • Excellent command of English and ability fo follow instructions, both verbal and written
    • Bilingual, English/Spanish preferred
    • Must be able to work AM, PM, weekends and holidays based on business demands
