The Lead Cook is responsible for assisting the Executive Chef and Sous Chef in creating a culinary experience that is unsurpassed, while adhering to health and required regulations and maintaining the standards of LHW and Granduca Hotel.

• Assist and support line staff and maintain communication between the management and culinary team
• Follow recipes, focus on presentation and taste of dishes according to Hotel Granduca standards
• Check the quality of raw materials in assigned areas, as well as storage, handling and usage
• Assist with training of all food preparation, timeliness of service and presentation of finished product
• Ensure team adhere to proper hygiene and appearance standards in department 
• Pay attention to detail and check dishes  for consistency in taste and presentation
• Update Sous Chef and Executive Chef on all aspects of operation, including equipment, employee relatentions and conflict resolution
• Assist in developing new dishes and recipes by keeping up with the latest market trends
• Conduct daily audit checks of all refrigerators and freezers for proper functioning and cleanliness
• Assist with timely preparation of menu items for all outlet areas including Banquets

• Maintain a professional, neat and organized appearance according to Hotel Granduca standards

• Provide warm, engaging and personalized service

• Maintain communicationwith Executive Chef to ensure the smooth operation of the department
• Assist in other areas of department as required
• Maintain compliance with all OSHA, Sanitation and other required regulations

• Maintain on-going training with team to ensure warm and engaging service, and the ability to anticipate our guests’ every need with care and thoughtfulness

• Ensure a safe work environment, immediately reporting improper safety practices and work- related injuries  
• Perform other duties as assigned

• At least 4 years' related supervisory experience in a luxury or full service hotel or upscale dining facility

• Must possess valid Food Handler's certificate 

• Minimum high school diploma or equivalent

• Must possess clear, concise communication skills and be able to follow verbal and written instructions

• Excellent time management skills 
• Bilingual - Spanish - preferred
• Ability to remain calm and maintain a cordial and pleasant demeanor during stressful situations or busy times
• Ability to muti-task and assist the team as needed

• Proficiency in Microsoft Office products, including Outlook, Word, Excel and PowerPoint

• Must be able to work required schedules, including evenings, weekends and holidays
