OVERVIEW:

 

The Assistant Food & Beverage Manager will support the F&B Manager and provide "hands on" assistance to the team to ensure a smooth day to day operation of all food & beverage outlets. The successful candidate will have an extensive background in full service Food & Beverage operations, along with solid wine knowledge and experience in fine dining service levels.

Responsibilities

RESPONSIBILITIES:

  • Support the Food & Beverage Manager with the daily operations of the restaurant and other F&B outlets in order to achieve maximum guest satisfaction 
  • Ensure compliance with hotel and restaurant policies and procedures and federal, state and local regulations while meeting/exceeding financial goals 
  • Create an environment of unconditonal support, positive team work , hands-on operation and open communication 
  • Practice lateral service, including Barback and Busser, Host(ess) as required to ensure a memorable guest experience 
  • Collaboratively work with culinary and other teams to provide a memorable dining experience for our guests
  • Support administrative responsibilities to include, but not limited to, inventory control, payroll and personnel procedures
  • Assist with scheduling and training with focus on labor, food costs and budgetary guidelines
  • Maintain visibility in Outlet areas and perfom all F&B duties as required to ensure exceptional service to guests
  • Organize wine and menu tastings and maintain on going training on proper set up and etiquette in all F&B outlets
  • Assist F&B Manager with inventory as required and purchasing of supplies and equipment
  • Assist with set-up and breakdown in all areas to ensure a timely and smooth operation of events and functions
  • Ensure outlets are clean, well-organized and stocked to facilitate optimum performance from team
  • Greet and seat the guests in all outlet areas and describe all menu and beverage items, while focusing on opportunities to upsell
  • Maintain an updated and organized record of all permits and licenses as required in the department and of the F&B team
  • Collaborate with management and other departments to resolve billing or guest issues in a timely manner
  • Answer phones, take reservations, act as IRD Order Taker/Server, Outlets Server and Bartender as required
  • Assist with Banquets set up, breakdown and Server/Bartender as required
  • Perform other duties as assigned

Qualifications

QUALIFICATONS:

  • Minimum high school diploma required
  • At least 2 years’ experience in a management role, in a fine dining environment in a full service hotel
  • Strong wine and liquor knowledge required - Sommelier certification preferred 
  • Updated and indepth knowledge of all menu items, daily specials and brunch items 
  • Experience assisting with schedules, labor costs, and productivity
  • Strong coaching and training abilities, with focus on positive and efficient customer service
  • Prior POS system knowledge required
  • Detailed knowledge of hotel and Outlets, services, amenities and hours of operation
  • Must possess valid TABC and Food Handler's certficate
  • Excellent communication skills and command of English required - verbal and written
  • Ability to speak and/or understand Spanish or other languages preferred
  • Knowledege of Banquets set up and functions required
  • Excellent time management skills required
  • Demonstrated proficiency with Microsoft programs - Word, Excel, power point - required
  • Must demonstrate excellent email and telephone etiquette
  • Ability to effectively communicate with management, teams and clients and guests from culturally and ethnically diverse backgrounds
  • Must be available to work any shift as required, including nights, weekends and holidays
