The Lead Cook is responsible for assisting the Executive Chef and Sous Chef in creating a culinary experience that is unsurpassed, while adhering to regulations and maintaining the standards of Granduca Hotel.

Responsibilities

 

  • Assist and support line staff and maintain communication between the management and culinary team
  • Follow recipes, focus on presentation and taste of dishes according to Hotel Granduca standards
  • Check the quality of raw materials in assigned areas, as well as storage, handling and usage
  • Conduct training on all food preparations, hygiene and appearance standards in department
  • Update Sous Chef and Executive Chef on all aspects of operation, including equipment, employee relations and conflict resolution
  • Assist in developing new dishes and recipes by keeping up with the latest market trends
  • Conduct daily audit checks of all refrigerators and freezers for proper functioning and cleanliness
  • Assist with preparation of menu items for all outlet areas including Banquets
  • Maintain a professional, neat and organized appearance according to Hotel Granduca standards

  • Provide warm, engaging and personalized service

  • Assist in other areas of department as required
  • Ensure compliance with all OSHA, Sanitation and other required regulations
  • Must be able to work flexible schedules, including evenings, weekends and holidays
  • Maintain on-going training with team to ensure warm and engaging service, and the ability to anticipate our guests’ every need with care and thoughtfulness

  • Ensure a safe work environment, immediately reporting improper safety practices and work related injuries  
  • Perform other duties as assigned

Qualifications

  • At least 4 years' related supervisory experience in a full service hotel or upscale dining facility
  • Must possess valid Food Handler's certificate 

  • Minimum high school diploma or equivalent

  • Must possess clear, concise communication skills and be able to follow verbal and written instructions

  • Ability to remain calm and maintain a cordial and pleasant demeanor during busy times
  • Must be able to muti-task and assist the team as needed
  • Must be proficient in Microsoft Office products, including Outlook, Word, Excel and PowerPoint

  • Ability to obtain and/or maintain any government required licenses, certificates or permits

  • Must be able to work flexible schedules, including evenings, weekends and holidays
